Cacao & Orange Bites

Ingredients

  • 200 g cashews
  • 100 g hazelnuts
  • 1.5 tbsp coconut oil
  • 50 g dates
  • 4 tbsp cacao powder organic
  • 2 tbsp desiccated coconut
  • 1 large orange
  • Pinch of rock salt

Instructions

  1. Add the cashew nuts and hazelnuts to a food processor and blitz on high until finely chopped - avoid blending for too long and creating a butter.
  2. Add in 2tbsps of the cacao powder and the coconut oil and switch the food processor onto a low setting and add the dates one by one.
  3. Grate the rind of the orange into the mixture and in a separate bowl squeeze out the juice. Switch the food processor on again and gradually add the orange juice until the mixture just binds together without getting too sloppy - you are unlikely to need all the juice you have squeezed out.
  4. Add the remaining cacao powder to a small bowl and add the coconut to another a small bowl with a pinch of salt mixed into each. Take a heaped teaspoon of the mixture and roll it first into a ball and then into alternate bowls to give different coatings.
