Happy Face Pizza

Ingredients

  • 1 cauliflower (Around 800g)
  • 100 g ground almonds
  • 1 egg
  • 2 tsp oregano
  • 1 tsp ghee/butter
  • 250 g tomatoes
  • 2 cloves garlic
  • 1 aubergine
  • 1 radish
  • 1 tbsp tomato purée
  • 1 red onion
  • 8 basil leaves
  • 1 sweetcorn (whole cob)
  • 2 peppers (different colours)
  • 20 g rocket

Instructions

  1. Heat a fan over to 180C.
  2. Chop the cauliflower into florets and put them on to steam over boiling water until tender (5-7 minutes).
  3. Meanwhile, add the tomatoes, garlic, tomato purée and a few basil leaves to the blender and pulse until a desired consistency (I prefer mine slightly chunkier), transfer to a saucepan and leave to simmer until the sauce has thickened (this can take 15 mins or so).
  4. In a food processor, whizz the cooked cauliflower until it resembles rice size pieces.
  5. Pour the cauliflower out on to an old tea towel and leave it too cool until it can be touched. Squeeze all the excess liquid out of the cauliflower through the tea towel.
  6. In a bowl, add the strained cauliflower, ground almonds, egg and oregano and mix to for a dough like consistency.
  7. On a lined baking tray, grease with a little melted butter and spread the dough into a circle that is about 0.5cm thick, keeping the edges a little thicker and place in the oven for 15-20 minutes, until the crusts just start to brown.
  8. THIS IS WHERE THE FUN STARTS! - choose some vegetable toppings to make the face. I have chosen aubergine, peppers, sweetcorn, radishes, red onion and basil. For vegetables with a high water content like aubergine, pre cook these under the grill or in a griddle pan before adding them to the pizza - this is so the water does not leach into the pizza base, making it soggy.
  9. Onto the cooked pizza base, once the tomato sauce has thickened enough so it is no longer runny, add it to the base - but not all the way to the edges. Sprinkle with cheese, then add your chosen toppings to make the face!
  10. Return to the oven for another 10-12 minutes until the cheese has melted and the vegetables are cooked. Serve immediately and enjoy your happy face pizza! I served mine with a simple rocket salad.
  11. TWO TOP TIPS: 1) the bases can be frozen once cooked and the toppings added another time! I would let the base defrost completely first before adding the topping and placing back in the oven 2) Roast any leftover vegetables, whizz in a blender and use them to make a soup!
