Ginger, Chilli & Tamari Prawn Stir Fry

Ingredients

  • 400 g king prawns
  • 2 leeks
  • 2 Romano peppers
  • 1 chilli
  • 3 cloves garlic
  • 1 piece ginger thumb sized
  • 150 g cauliflower
  • 300 g mushrooms
  • 1 tbsp sesame oil
  • 1 tsp Thai 5 spice
  • 2 tbsp tamari
  • 4 courgette
  • Handful fresh coriander

Instructions

  1. Chop the garlic, chilli and ginger and cook for 3 mins in the sesame oil over a medium heat.
  2. Chop the leeks, peppers, mushrooms and cauliflower and add to the pan. Cook for another 5 minutes.
  3. Add the Thai 5 spice and cook for a further minute. Then add the prawns and tamari sauce and cook around 4 minutes until the prawns are cooked through.
  4. Sprinkle coriander liberally over the top and serve on a bed of raw courgetti
